Grilled Chicken Fajitas

A simply amazing Fajita recipie

  • -- Marinade --
  • 1/4 cup Fresh lime juice
  • 1/3 cup Water
  • 2 tablespoon Vegetable oil
  • 2 cloves Garlic
  • 3 teaspoon Vinegar
  • 2 teaspoon Soy sauce
  • 1/2 teaspoon Liquid smoke
  • 1 teaspoon Salt
  • 1/2 teaspoon Chili powder
  • 1/2 teaspoon Cayenne
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Onion powder
  • 1 pound Boneless skinless chicken breast
  • 1 large Onion
  • 1 Red bell pepper
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Soy sauce
  • 2 tablespoon Water
  • 1/2 teaspoon Lime Juice
  • dash Salt and pepper
  • -- ON the SIDE --
  • 1/2 cup Fresh salsa
  • 1/2 cup Shredded chedar cheese
  • 1/2 cup Guacamole
  • 1/2 cup Sour cream
  • 1 cup Shredded lettuce
  • 8 flour Tortillas
  1. - Combine all the marinade ingredients in a small bowl - Add meat and soak for at least 2 hours - Heat grill to medium-high - Preheat skillet over med-high - Grill Chicken (6 min per side) - Saute onions and red pepper slices for about 5 min, onions are beginning to brown - Combine soy sauce, water and lime juice in a small bowl than add to the onion mixture - Add black pepper and continue to cook till onions are dark on edges about 5 min more - Remove chicken from grill and cover to rest for 5 min - Slice the chicken - Serve the Chicken and Onions on a HOT cast iron skillet with all sides to assemble fajitas.
